100g Rucola

Die Bete in hauchfeine Scheiben schneiden und auf dem Teller ausbreiten. Eine handvoll Rucola darauf verteilen und mit einer Vinaigrette beträufeln.
Für die Vinaigrette einfach ein wenig Balsamicoessig mit einem Schuss Olivenöl, Salz und Pfeffer verrühren und den Salat damit beträufeln.
